Ingredients

  • 1 banana mashed
  • ½ cup nut butter smooth or crunchy
  • ½ cup all purpose flour
  • ½ cup whole wheat flour
  • 1 tsp baking powder
  • 1 egg
  • ¼ tsp baking soda
  • 1 tbsp maple syrup, honey or sugar substitute a bit more to taste if you'd like

  • 1 tsp cocoa powder optional

Instructions

  • Preheat oven to 350° and line a baking sheet with parchment paper.
  • Combine all ingredients in a bowl and stir with a spoon.
  • Create drop cookies by spooning cookie dough on to cookie sheet or lightly wet your fingers with water and use your hands to form balls. Place on baking sheet and press down slightly.
  • Bake for 10-12 minutes.
  • Simply slide the parchment paper onto a counter or cooling rack to free up your baking sheet. Cool and enjoy.

Notes

Be sure to cool cookies completely before storing in an air tight container in the fridge. I leave mine on a dish or cookie jar on the counter for a day or two.
Chopping chocolate chips either by knife or food processor creates a beautiful effect and helps distribute the sweetness throughout the cookie. Mini chips work well too as well as simply pressing a few full sized chips into each cookie before baking.
If you don't have parchment paper handy no problem! Just lightly grease your baking sheet. Do NOT use wax paper as it is not the same as parchment paper.
Optional ingredients:
Vanilla extract- I use it because it's delicious but won't make or break your cookie so don't sweat it. It's so expensive right now anyway. lol
Cocoa powder is a great way to add chocolatey goodness, magnesium and iron.
