Syrup ingredients

  • 2 oranges (or equal amount of other citrus)
  • 1 cup water
  • 1 cup orange juice (or use 2 cups water omitting juice)
  • 1 cup sugar
  • 1/4 teaspoon nutmeg
  • splash of vanilla extract

Syrup directions

  1. In a sauce pan, add the sugar, liquids and nutmeg. Stir to dissolve all the sugar. Bring to a boil over medium high heat. Reduce to a simmer.
  2. Wash and thinly slice oranges. If you’d like to give your syrup a more “marmalade” like quality, thinly slice the discarded ends like the photo below. So tasty!
  3. Add oranges to a bowl and cover with boiling water. Let sit for 2 minutes to remove bitterness. Drain. Carefully add oranges to sugar mixture.
  4. Return to a heavy boil while stirring for about 2 minutes. Reduce to a simmer. Let it simmer for up to 30 minutes stirring occasionally. Do not let it burn.
  5. Sliced oranges can be placed on your pancake before baking while syrup and any zest can be transferred to a serving dish. So pretty!
