I’ve recently gone a bit mad over lemons. Yup. I’m a lemon lover. Lemon popsicles, lemon body scrubs and lemon chia seed cookies. You know what? I don’t mind one bit.
These refreshing popsicles are made of fresh lemon in a bright homemade lemonade. The whole trick is to slice the lemon as thin as you can get it. Leave it as raw as possible while reducing the bitterness.
Why Lemon? I’ll tell you why…
According Healthline and WebMD the benefits of lemon are many. Packed with vitamin C, antioxidants and fiber these nutritious fruits help support heart health, weight control, aid digestion, reduce inflammation, help lower blood pressure, improve skin quality and more! I’ll take it!
…and they taste great.
Gather your popsicle supplies
- Fresh lemon
- Water
- Lemon juice
- Sugar or sweetener
- Popsicle molds
- mixing cup
- spoon
Fresh Fruit
Lemon – Fresh lemon, washed, and sliced as thin as you can get it. Cut enough slices to add one or two per popsicle. Remove seeds and discard. If your lemons are too wide to fit in your molds feel free to half or quarter them. Place slices in a bowl and cover with boiling water. Let them soak for 20 min and drain, discarding the liquid.
Lemonade
Water – Depending on the amount of popsicles you will be making, just guesstimate how much you will need. No problem if you make a tad extra- a prize for the chef! If you need exact measurements simply fill your molds most of the way with water and pour this into a bowl.
Lemon juice – Fresh is best with a much brighter flavor, but if you are short on lemons you can substitute bottled lemon juice.
Sugar or sweetener – I Prefer half sugar and half honey. If you need these treats to have no added sugar than by all means substitute your favorite sweetener!
Everyone has a preference as to a perfect lemonade. A popular mix is 6 Tablespoons each of white sugar and lemon juice, mixed in 2 cups of water. I like my lemonade lighter and not so sweet so I always add more water until it suits my taste. Mix to suit your taste!

Popsicle molds
You can get as cute as you want here as there are a zillion to chose from. I’ve even seen folks use dixie cups. I use a cheap little plastic set I found at the grocery store and will continue to use them until they break in half. Haha!
Mixing cup
For ease of pouring into your molds, mix your lemonade in a container with a spout or my favorite- a plastic cup I can gently squeeze into a spout shape.
Popsicle assembly
Alright lemon lover, Simply drop a slice or two of your drained lemon and into each mold. Fill with lemonade almost to the top as the stick will displace some of the liquid and you don’t want them to overflow. Place in the freezer for about 6 hours.
When you’re ready to enjoy your frozen treat run the popsicle mold under cool tap water for a few seconds to release the popsicle. I’ve found cool water works best. Hot water tends to hasten the melting process.
Can I eat a lemon popsicle AND a cookie while indulging in a lemon bath? I think I might just have to try it! LOL
