These strawberry lemon popsicles are so refreshing. A much needed healthy treat to beat the summer heat!

The whole idea of these strawberry lemon popsicles is to suspend fresh fruit in a bright homemade lemonade. The trick is to slice the lemon as thin as you can get it and leaving it as raw as possible while reducing the bitterness.
OK, I admit I am a preserved lemon rind, candied orange zest, marmalade lovin’ kind of gal so this recipe made perfect sense to me. What I didn’t expect was for the kids to love them too. Sweet!

Strawberries & lemon
Strawberry – I prefer to make these with big, juicy slices of fresh strawberries but if I were in a pinch I could use frozen strawberries, no problem. Slice enough berries to add several slices per popsicle.
Lemon – Fresh lemon, washed, and sliced as thin as you can get it. Cut enough slices to add one or two per popsicle. Remove seeds and discard. If your lemons are too wide to fit in your molds feel free to half or quarter them. Place slices in a bowl and cover with boiling water. Let them soak for 20 min and drain, discarding the liquid.
Lemonade
Water – Depending on the amount of popsicles you will be making, just guesstimate how much you will need. If you make extra, hurray– you get a refreshing beverage when you are done. If you need exact measurements simply fill your molds most of the way with water and pour this into a bowl.
Lemon juice – Fresh is best with a much brighter flavor, but if you are short on lemons you can substitute bottled lemon juice.
Sugar or sweetener – I Prefer half sugar and half honey. If you need these treats to have no added sugar than by all means substitute your favorite sweetener!
Mix to your own taste! Everyone has a preference as to a perfect lemonade. A popular mix is 6 Tablespoons each of white sugar and lemon juice, mixed in 2 cups of water. I like my lemonade lighter and not so sweet so I always add more water until it suits my taste.
Popsicle molds
There are tons to choose from. Some with cute shapes, some that require wooden popsicle sticks. I love the look of wooden popsicle sticks but since they are not reusable it makes me feel bad to go through so many! All are fun but I believe the best ones are the ones you have on hand.
Mixing cup
For ease of pouring into your molds, mix your lemonade in a container with a spout or my favorite- a plastic cup I can gently squeeze into a spout shape.
Popsicle assembly
Simply drop a slice or two of your drained lemon and a few slices of strawberry into each mold. Fill with lemonade almost to the top as the stick will displace some of the liquid and you don’t want them to overflow. Place in the freezer for about 6 hours.
When you’re ready to enjoy your icy treat run the popsicle mold under cool tap water for a few seconds to release the popsicle. I’ve found cool water works better than hot as it doesn’t start to melt… these extra minutes give my littlest one a fighting chance. Haha!
