Mixed berries and coconut cream popsicles are a dream on a hot summer day! Super easy to make and such a lovely flavor combination. I love giving these to the kids as long as they stay outside!
Round up your popsicle supplies
- Frozen berries
- Coconut cream
- Sugar or sweetener
- Popsicle molds
- Blender
Fruit
Berries- Yes you can make these with fresh berries but sometimes I can’t wait a full 6 hours for the popsicles to freeze, so I like to cheat and shorten the freezing time by using pre frozen berries!
About a cup of berries are good for six pops.
Coconut Cream
Coconut cream sold in cans is fast and easy, not to mention easily available at most grocery stores. I like to sweeten mine up a bit with sugar or honey depending on what I have on hand… and my mood.
Popsicle molds
Any popsicle mold you have handy is a great one. Mom used to use ice cube trays and toothpicks in a pinch. (How many popsicle molds did my sister and I go through? Too many I’m sure!)
If you want to get fancy, there are tons available on amazon in a bunch of shapes and styles.
Blender
I like to pulse the berries in a blender with a splash or two of water. Whole berries like blueberries sometimes cause the popsicle to break. I also love to break the berries open so they make my popsicles a beautiful color.
Popsicle assembly
Simply pour berry mixture into popsicle molds a little more than half way. Top the rest with sweetened coconut cream. Use a spoon handle to swirl the mixtures together if you like.

Alternatively, fill molds half way with berry mix and freeze at an angle for a few hours then top with coconut cream for a fun look. When freezing the first layer make sure to leave enough space to insert the popsicle sticks.
Freeze your pops for about 6 hours before serving.
When you’re ready to enjoy your tasty coconut cream popsicles run the mold under cool tap water for a few seconds to release the popsicle.
