Quick and easy side dish, artichokes with brown butter and goat cheese.

Beyond easy to make, these artichokes are one of our favorite side dishes. The zesty tang of goat cheese is brightened by fresh lemon and rounded out with the nutty creaminess of brown butter. Drooling. Fit for a holiday with loved ones yet easy enough to whip up on a busy weeknight.

Equipment

  • sauce pan
  • 1 quart baking dish

Ingredients

  • 4 tbsp butter 1/2 stick
  • 1/4 cup mayo
  • 1/2 small lemon (juice of) reserve zest for garnish if you'd like
  • 1/4 tsp salt
  • 3 oz goat cheese
  • 3 13.75 oz cans of quartered artichokes

Instructions

  • Preheat oven to 350°. In a sauce pan melt butter over medium high heat until foamy and starting to turn brown on the bottom. SMELLS SO GOOD! Remove from heat.
  • Add mayo, lemon juice and salt. Whisk smooth. It may look lumpy and separated at first. Keep on whisking.
  • Remove artichokes from can and squeeze out excess moisture. I use my hands. Add to sauce pan with about 2 oz of the goat cheese and toss to coat. Pour into 1 quart baking dish and sprinkle with remaining goat cheese.
  • Warm in oven for 20 min. Broil for a minute or two to brown the top if you'd like. If traveling with this side dish for the holidays it may take longer to heat through at your destination if it had been refrigerated previously.

Holy cow that was EASY!
