“Sometimes you just need a little bit of lemon to brighten up your life.” – Me

Makes roughly 3 dozen cookies. 20 minutes.

Quick note on soaking chia seeds:

The reason for pre-soaking chia seeds is so they have their own moisture and they wont suck it right out of the dough. We want big, gloriously soft cookies!

Simply combine roughly 1/4 cup chia seeds with 1 cup water and allow to soak for 20 minutes. I use warm water to speed the process a long and I add a splash of vanilla to add a touch of flavor.

You’ll have plenty of soaked chia seeds left over… use it to adjust your dough if it is too dry. Dump the rest in a tasty beverage and enjoy!

Cookie ingredients

  • 2 cups salted butter
  • 2 cups sugar
  • 2 eggs
  • 1 tablespoon vanilla
  • 1 tablespoon lemon extract
  • 4 teaspoons baking powder
  • 6 cups flour
  • 4 tablespoons of pre-soaked chia seeds
  • 1 tablespoon poppy seeds
  • lemon zest (optional)

Gorgeously tasty. Try not to eat all of the dough!

Instructions

  1. Cream butter and sugar in your mixer.
  2. Mix in flavoring, eggs and chia seeds.
  3. Thoroughly mix in baking powder.
  4. Mix in flour a few cups at a time. If it becomes to much of a strain on your mixer you may wish to mix it by hand instead.
  5. Roll out a few handfuls of dough on a floured surface. Dough should be 1/3″ to 1/2″ thick. Isn’t this dough beautiful?!  Not sticky at all. If after re-rolling the scraps the dough becomes too dry from excess flour, return dough to the mixer and add another tablespoon of your pre-soaked chia seeds. Easy peasy.
  6. Cut out shapes and transfer to an un-greased cookie sheet. A spatula works great to move more delicately shaped cookies before lifting off the cutter.
  7. Bake at 350 degrees for 6-7 minutes for small or thin cookies, 7-8 minutes for big or thick cookies, 9 minutes for large, thick cookies (my favorite!) They most likely will not look done to you. You do NOT want these cookies to brown.
  8. Cool on baking sheet for a minute or two, transfer to wire rack or kitchen towel. Let cool completely before decorating.

Simple lemon glaze

Keep things super quick and simple, add some lemony zing with a drizzle of lemon glaze (recipe below) and call it a day. Delicious!

If you’d like to take it a step further and whip up a batch of royal icing (pictured), by all means do it. Check out the recipe here. Substitute 2 tablespoons of water for fresh squeezed lemon juice and go from there…

Heck, these cookies are great on their own too!

For the glaze

  • 1 cup powdered sugar (confectioner’s sugar)
  • 1 tablespoon fresh squeezed lemon juice
  • lemon zest (optional)
  • yellow food coloring (optional)

Simply whisk the ingredients together and drizzle over cooled cookies… or just stand there and dunk cookies into the icing until someone catches you. LOL!
